Raw Broccoli Salad

My new favourite. This easy salad contains broccoli for calcium and vitamin C, toasted seeds for vitamin E and fibre, and red onion which contains anthocyanins - pigments thought to protect against heart disease.

Serves 2:


You'll need:

1 head of broccoli - remove the stalk then roughly chop

1 red onion

1 or 2 golden delicious apples

1 handful of toasted seeds - I used a mix of sunflower, linseed and pumpkin

1 handful of dried cranberries


Optional:

Grated cheddar cheese and left greens.


Honey Mustard Dressing:

2 tablespoons extra-virgin olive oil

1 table spoon apple cider vinegar

Half tablespoon dijon mustard

Half tablespoon honey

1 crushed clove of garlic

Pinch of sea salt


Super simple instructions:


Mix all the dressing ingredients in a small bowl.


Roughly chop the broccoli, red onion and apples and add to a large bowl. Add the nuts and cranberries then mix thoroughly.


Add the dressing and mix again.


Serve with a handful or tortilla chips or a small slice of crusty bread for lunch, or with grilled fish for dinner.
